Is it worth the jump from a Myvi to a Vios, or save up for the jump to a Corolla instead?

It depends on your needs. If you spend most of your time on the highway, the Vios is quite an upgrade from the Myvi. If you’re mostly in the city, it’s not that big difference. If not, then stick with the Myvi or go all out for the Corolla.
Does the Toyota Vios really just a sedan Myvi or is there more to it?

It is definitely more than just a "sedan Myvi." Inside it feels more premium, there's better sound insulation, and it's got a more refined ride. Yes, it’s a little pricier, but you do get what you pay for in terms of comfort and build quality.
So why do people still continue to buy the Vios even if it’s not really that good looking and doesn’t have that much features?

In many Asian countries it's a cultural thing. The car is regarded more as a practical tool, or even dispassionately, as a nonstatus statement or, at best, a source of driving pleasure. The Vios is just that, a car that does the job without any fuss.
But is this good first car life with the Vios for new drivers or other options are better?

I think new drivers would have more benefit from a car with advance safety features such as autonomous emergency braking but the Vios is okay. These technologies can be a real lifesaver for inexperienced drivers, and many newer, similarly priced cars offer them.
How is Vios ownership experience over the long term compared to Honda City?

Never underestimate the importance of after sales service. Honda service center is much better than Toyota in my city. It makes a big difference when you are dealing with regular maintenance over many years.
